The wine for the pop-up comes from Georgiev & Milkov, a Bulgarian winemaking project focused on old vineyards and authentic local varieties.
Petar Georgiev and Radostin Milkov work with grapes including Red Misket, Mavrud, Rubin and Pamid, giving indigenous Bulgarian varieties a contemporary expression.
